css styles changes, e.g. toolbar color or context menu

I'm trying to get a hang on how to change styles. Now I looked at the themes quickstart video, and read posts here, but I'd be glad for further help. As for my knowledge, I've got no problems with .css but I am struggling with .xslt.

Creating a custom control sounds good, but how can I change an existing one without starting from scratch?

For instance: How do you remove the blue border from a contextmenu control (there is not even a .xslt file)? Or: How to change the color of the toolbar?
